PB Energy Balls

2 cups Walnuts (raw)

1 cup pitted Medjool dates (if using another dates variety might need more)

1/2 cup Peanut butter (creamy or crunchy; no oil added)

Pinch salt (optional; if the peanut butter has no salt)

To a food processor add the walnuts and process until it becomes crumbly. Add the dates and process until the dates are broken into small pieces. Add the peanut butter and process until it becomes a sticky dough with some visible small chunks.

With a spoon or ice cream scoop take some dough and make a ball. Repeat the process until all the dough is used. Refrigerate for an hour; it’ll get harder. Keep in the refrigerator in a sealed container. Share with your loved ones and enjoy!
