Peanut Butter Cookies

1 1/2 C Rolled oats

1/2 C Walnuts

1 Tbsp Ground flax seeds

3/4 C Medjool dates (if using another variety you’ll probably need more)

3/4 C Peanut butter

1 Tsp Vanilla extract

1/2 Tsp salt

In a food processor add the rolled oats, walnuts, ground flax seeds and salt. Process until it becomes crumbly. Add the dates, peanut butter and vanilla and process until it becomes a sticky dough (do not process too long! it should have some chunks).

Form balls and place them in a baking pan (with a baking paper) and flatten with your hand or with a fork. Bake @325*F for 17-20 minutes. Keep an eye on them! They should turn golden brown. Allow them to cool before eating. Drizzle a little peanut butter and add some chopped peanuts for an extra crunch. Enjoy!
